Ingredients

  • 80 g orange zest (finely chopped)
  • Juice and zest of three oranges (unprocessed)
  • 2 Eggs
  • 250 g sugar
  • 400 g ground almond kernels
  • 2 tbsp pistachios (chopped)

Instructions

    Beat the eggs with 150 g sugar until fluffy, fold in almonds, orange zest, and orange zest, mix well, then roll out between plastic wrap to about 1 cm thickness, cut dough into diamonds, place on a parchment-lined baking sheet and bake in preheated oven at 160°C for about 12 minutes. (Bake in two batches if needed)

    Boil the remaining sugar with orange juice and simmer for about 5 minutes until sparkling, remove from heat and let cool. Soak the cookies in the prepared orange syrup, sprinkle with pistachios and allow to dry for about 2 days.
