Almond Cookies

Ingredients
- 150 g flour
- 70 g powdered sugar
- 100 g peeled and ground almond kernels
- 120 g butter
- 1 egg
- 2 tbsp rose water
- 60 g dark chocolate
- 200 g marzipan base
- 1 Egg white
- 50 g powdered sugar
- 220 g roasted almond flakes
- 80 g chopped candied orange peel
- powdered sugar (for dusting)
Instructions

Mix flour, sugar and almonds. Add cold butter in pieces, the egg and rose water, crumble with a knife and quickly knead into a smooth dough. Cover and chill for 2 hours.

Preheat the oven to 180°C (Oven top and bottom heat).

Roll out the dough between cling film to a thin sheet and cut round cookies (~6 cm diameter). Place on a baking tray lined with parchment paper and bake in the preheated oven for about 12 minutes.

Coarsely chop the chocolate, melt over a hot but not boiling water bath, remove from heat and let cool to lukewarm.

Knead the marzipan with egg white, powdered sugar and chocolate and form small balls.

Take the freshly baked cookies out of the oven, lift them off the tray with parchment paper and let them cool.

Press one small marzipan ball onto each cookie, insert almond cookie petals into it, garnish with chopped candied orange peel and allow to dry.

Serve dusted with powdered sugar.
