Christmas Almond Confection

Ingredients

  • 100 g almonds
  • 20 g pistachios
  • 2 egg whites
  • 400 g sugar
  • 0.5 tsp cinnamon powder
  • 0.5 tsp ground cardamom
  • 200 g couverture (whole milk)

Instructions

    Line a cake pan with parchment paper. Roughly chop the almonds and pistachios. Whip the egg whites into stiff peaks and refrigerate.

    Add the sugar to a pot and pour in 100 ml water. Add cinnamon and cardamom. Stir constantly over high heat until it boils once, then remove from heat and stir until no bubbles remain. Repeat this process about eight times. The sugar mass should reduce to a thick liquid without caramelizing.

    Pour the sugar mixture into a bowl and fold in the whipped egg whites with an electric hand mixer. Fold in the nuts and quickly transfer the mixture into the prepared pan, smoothing the surface. Let it rest for about one hour. Remove from the pan and cut through the middle to create two bars.

    Melt the couverture over a double boiler, let it cool slightly, then coat the confection and allow it to set. Cut into 1 cm wide pieces and serve.
