Mocha Macarons with Filling

Ingredients
- 3 egg whites
- 200 g sugar
- 1 tsp lemon juice
- 100 g ground hazelnuts
- 125 g ground almonds
- 1 tbsp ground coffee
- 50 g dark chocolate
- 50 g soft butter
- 1 egg yolk
- 75 g powdered sugar
- 2 tbsp coffee liqueur
- 1 tbsp ground almonds

Beat the egg whites until stiff. Gradually add the sugar and drizzle in the lemon juice, beating until the sugar dissolves. Mix in the hazelnuts, almonds, and coffee, folding into the meringue.

Line a baking sheet with parchment paper. Preheat the oven to 160°C fan.

Fill a piping bag fitted with a large round tip with the batter and pipe roughly hazelnut-sized heaps onto the sheet. Bake the macarons in the preheated oven for about 15 minutes. Transfer to a cooling rack and let cool completely.

For the filling, crumble the chocolate and melt it over a double boiler. Set aside and allow to cool slightly. Whisk the butter until fluffy. Add the egg yolk, powdered sugar, and coffee liqueur, beating into a creamy mixture. Fold in the melted chocolate. Stir in enough almonds so the cream remains spreadable.

Spread a small amount of filling on two macarons and sandwich them together.
