Cheese Cookies

Ingredients

  • 100 g cheddar
  • 100 g flour
  • 1 tsp Baking powder
  • paprika powder, hot
  • 40 g Butter
  • 40 g finely chopped pistachios
  • 2 tbsp freshly grated Parmesan

Instructions

    Grate the cheddar cheese. Mix the flour with the baking powder and paprika. Add the cheddar and butter in chunks and knead everything into a smooth dough. Fold in the pistachios at the end.

    Shape the dough into a roll (about 5 cm diameter) and wrap it in foil. Refrigerate for 2 hours.

    Slice the dough roll into about 5–6 mm thick slices. Place the slices on a baking sheet lined with parchment paper. Gently press them with a meat mallet and sprinkle with Parmesan. Bake in a preheated oven at 180 °C (gas: level 2‑3, fan: 160 °C) for 12–15 minutes.
