Ingredients
- 3 egg whites
- 1 tsp lemon juice
- a pinch salt
- 180 g powdered sugar
- 200 g ground blanched almond kernels
- 2 tbsp Cornstarch
- 2 tbsp instant coffee powder
- 0.5 tsp cinnamon
- 1 tbsp cocoa powder (for dusting)
Instructions

Beat the egg whites with lemon juice, salt and sugar until stiff peaks form and all sugar is dissolved, creating a shiny white firm mixture.

Mix almonds with cornstarch, coffee powder and cinnamon, then fold into the meringue.

Fill a piping bag fitted with a small round tip and pipe 2 cm diameter clusters spaced 3 cm apart onto a parchment-lined baking sheet. Bake in a preheated oven at 150°C (fan) for about 25 minutes. Remove, detach immediately from the tray, and cool on a rack. Dust with cocoa powder. Serve with coffee or tea.
