Ingredients
- 6 eggs (medium)
- 125 g sugar
- 125 g soft butter
- 2 packets vanilla sugar
- 0.5 untreated lemon (zest and juice)
- 250 g ground almonds
- 50 g flour
- 0.5 packet Baking powder
- 4 tbsp almond liqueur (optional)
- powdered sugar (for dusting)

Separate the eggs. Whip the egg whites until stiff, letting 1/3 of the sugar fall in. Cream the butter. Gradually add the remaining sugar, vanilla sugar, yolks, lemon zest and juice, whisking into a creamy batter. Mix the almonds with flour and baking powder and fold in. Fold in the beaten egg whites.

Line the bottom of a springform pan with parchment paper. Pour in the batter. Bake in a preheated oven at 200°C for about an hour. If the cake darkens, cover it with foil. Optionally drizzle hot almond liqueur over the warm cake. Dust with powdered sugar.
