Almond Apple Cake with Crumb Topping

Ingredients
- 200 g Spelt flour Type 1050
- 150 g ground almonds (peeled)
- 200 g butter
- 1 egg
- 1 pinch salt
- 100 g raw cane sugar
- 5 tart apples (e.g., Boskop)
- 2 tbsp lemon juice
- 1 tbsp liquid honey
- 1 pinch cinnamon
- 1 tsp powdered sugar from raw cane sugar
Instructions

Knead 150 g flour, 100 g almonds, 150 g butter pieces, the egg, salt and 70 g raw cane sugar into a smooth dough. Add a little cold water or extra flour if needed. Shape into a ball, wrap it, and chill in the refrigerator for about 30 minutes.

Wash the apples, quarter them, remove the cores, and cut the quarters into strips. Toss with lemon juice.

Roll out the dough and place it in a greased springform pan, forming a rim. Arrange the apple strips on top and drizzle with honey.

For the crumb topping, combine the remaining flour, almonds, cinnamon, raw cane sugar, and cold butter between your hands to form crumbs, then sprinkle over the apples. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 3–4) for about 45 minutes until golden brown.

Let it cool, dust with powdered sugar, and serve.
