Air Fryer Fish

Ingredients

  • 1 handful parsley
  • 2 tbsp walnut kernels (15 g each)
  • 1 tbsp cashew paste
  • 1 tbsp grated hard cheese (30% fat in the mix)
  • 1 tsp Mustard
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • 2 salmon fillets (150 g each, about 2–3 cm thick)
  • 400 g small potatoes (triples)
  • 1 sprig rosemary
  • 400 g green asparagus
  • 1 bundle radishes
  • 2 tbsp pine nuts (15 g each)
  • 0.5 organic lemon zest

Instructions

    Wash, dry and chop parsley for the salmon crust; also chop the nuts. Mix parsley, nuts, cashew paste, hard cheese, mustard and 1 tbsp olive oil together and season with salt and pepper. Pat salmon fillets dry, salt and pepper them. Spread the mixture over the fillets and press lightly.

    Wash potatoes and quarter or eighth them. Wash rosemary, dry shake it and pluck off needles. Put potatoes in a bowl, add 1 tbsp olive oil, salt, pepper and rosemary and mix. Wash asparagus and cut off woody ends. Clean radishes, wash and halve or quarter them.
