Honey-Glazed Ham Roast

Ingredients
- 4 tbsp apple jelly
- 4 tbsp Lemon juice
- 1 pinch cayenne pepper
- 1.5 kg cured pork ham roast (with rind)
- 2 tbsp clarified butter
- 1 apple
- 1 handful cranberries
- 2 sprigs Rosemary
- 2 tbsp butter
- 2 tbsp honey

Warm the apple jelly, mix with lemon juice and cayenne pepper to make a glaze. Rinse the ham roast cold and pat dry. Score the rind in a diamond pattern. In a roasting pan heat clarified butter, brown the meat all around. Add 200 ml water. Brush the roast with some glaze and bake in a preheated oven at 175°C for 90 minutes, brushing with glaze every few minutes.

Meanwhile peel, quarter, core the apple and cut into wedges. Wash the cranberries. Heat butter in a non-stick pan, add apple slices and cranberries, sauté briefly. Tear rosemary leaves and add with honey. Simmer over medium heat until lightly caramelized.

Serve by slicing the roast and garnish with the fruit as desired.
