Acai Yogurt Ice Cream with Crunch

Ingredients

  • 500 g yogurt
  • 150 ml whipping cream
  • 40 g icing sugar
  • 300 ml acai berry puree
  • 2 tbsp acai powder
  • 2 tbsp lemon juice
  • 100 g brown candy
  • 30 g chopped pistachios

Instructions

    Whisk the yogurt with the cream, icing sugar, acai puree, acai powder and lemon juice. Chill the mixture for about 1 hour, then churn in an ice cream maker for approximately 30 minutes until creamy.

    If you don’t have an ice cream maker, whip the cream to stiff peaks and fold it into the mixture. Pour into a shallow dish and freeze at least 3 hours, stirring vigorously every 20 minutes to prevent large ice crystals.

    For the crunch, finely chop the brown candy with a food processor. Melt with 3 tbsp water in a hot pan until golden‑brown caramelized. Stir in pistachios, spread on parchment paper, cool, then break into pieces.

    Just before serving, stir the ice cream again, scoop into bowls and garnish each with a sprinkle of crunch.
