Currant Cheesecake

Ingredients

  • 100 g butter
  • 200 g oat cookies
  • 5 sheets white gelatin
  • 1 orange (unprocessed)
  • 200 g Cream cheese
  • 200 g quark
  • 100 g powdered sugar
  • 300 ml whipping cream
  • 250 g currants
  • 2 tbsp sugar
  • currant leaf (for garnish)

Instructions

    Melt the butter in a pot over low heat. Place the cookies in a freezer bag and crush into fine crumbs with a rolling pin. Mix the crumbs with the butter and spread on the bottom of a springform pan. Press firmly and refrigerate.

    Soak the gelatin in cold water. Wash the orange hot, dry it, and grate about half of its zest. Squeeze out the juice.

    Whisk together the cream cheese, quark, powdered sugar, and orange zest. Beat the whipping cream until stiff peaks form and fold gently into the mixture. Squeeze out excess water from the gelatin and warm with the orange juice in a pot until melted. Stir 2–3 tbsp quark cream into the gelatin, then fold the gelatin into the custard. Spread over the crust and smooth. Chill for at least 2 hours.

    Rinse the currants and pat dry. Optionally leave them on stems or drop them off. Sprinkle sugar over the berries, mix, and spread on the cheesecake. Garnish with leaves and serve.
