Ingredients
- 350 g puff pastry (frozen)
- flour (for the work surface)
- 350 g red currants
- 5 tbsp sour cream
- 3 tbsp Plain yogurt
- 3 tbsp sugar
- 0.5 vanilla pod (mash)
- powdered sugar (for dusting)
Instructions

Let the puff pastry thaw.

Preheat the oven to 200°C fan or conventional heat.

Roll out the dough on a floured surface, cut in half and line two greased springform pans with it. Prick the base several times with a fork and cover with parchment paper and beans. Bake in the preheated oven for about 20 minutes.

In the meantime wash, clean, strip off stems from the currants and let them drain.

Whisk together sour cream, yogurt, sugar and vanilla mash.

Remove the pastry from the oven, take away the beans and parchment and let it cool. Spread the vanilla cream over it, top with currants and dust with powdered sugar before serving.
