Ingredients

  • 1 kg plums
  • 3 tbsp vegan egg replacer powder
  • vegan butter (for the pan)
  • 250 g vegan butter
  • 200 g sugar
  • 1 pinch salt
  • 1 Vanilla bean
  • 500 g flour
  • 3 tsp baking powder
  • 125 ml rice drink (rice milk)

    Wash the plums, halve them and pit them. Preheat the oven to 180°C fan. Whisk the egg replacer powder with 80 ml water and let it bloom. Meanwhile grease a springform pan. Cream the butter with sugar and salt. Split the vanilla bean, scrape out the seeds and add them to the bowl. Continue mixing, gradually adding the egg replacer mixture until fluffy. Mix flour and baking powder, then fold in the rice milk to form a firm batter. Spoon half of the batter into the greased pan and top with halved plums (cut side up). Spread the remaining batter over the fruit and top with the rest of the plums. Bake for about 50 minutes. If the cake darkens too much, cover it promptly with foil. Remove from oven, let rest 10 minutes, then loosen the springform rim and cool on a wire rack.
