Low-Carb Fig Dessert
The low-carb fig dessert from Spoonsparrow is not a sin and melts on the tongue.
Ingredients
- 200 g fig (4 figs)
- 30 g almond slivers (2 tbsp)
- 20 g butter (1 tbsp)
- 0.5 Organic lemon
- 1 egg
- 100 g low-fat quark
- 40 g erythritol powdered sugar (4 tbsp)
- 1 tsp almond flour

Wash the figs and remove stems. Cut each fig crosswise, press slightly, and place in a small baking dish. Sprinkle almond slivers evenly over them.

Melt butter in a small saucepan. Meanwhile wash lemon, dry rub it, and finely grate the zest.

Separate egg whites from yolks. Whisk yolk, quark, melted butter, lemon zest, 1½ tbsp powdered sugar, and almond flour until creamy.

Beat egg whites with a pinch of salt; gradually add remaining powdered sugar and beat to stiff peaks. Gently fold the meringue into the quark mixture with a spoon.

Spoon quark mixture over figs. Place baking dish on a tray and bake under preheated grill on lowest rack for 4–5 minutes until golden brown. Dust with remaining powdered sugar before serving.
