Ingredients
- 20 g fresh yeast (1/2 cube)
- 100 g sugar
- 0.2 l lukewarm milk
- 400 g flour
- 1 pinch salt
- 1 egg
- 75 g melted butter
- 50 g breadcrumb crumbs (bread crumbs)
- 2 kg plum fruit
- butter (for the baking sheet)
- whipped cream (for serving)

Dissolve the yeast and 1 tablespoon sugar in the milk and let stand covered for 15 minutes. Mix half the flour, salt, egg, and 75 g sugar with the yeast milk and melted butter. Gradually knead in the remaining flour. Let the dough rise covered in a warm place for about 45 minutes until it roughly doubles in volume.

Preheat the oven to 200°C fan.

Knead the dough again vigorously. Butter the baking sheet and roll out the dough onto it, forming a small edge. Sprinkle with crumbs. Wash, pit, and halve the plums. Score the upper part of each plum in a slanted pattern and arrange them like roof tiles on the dough. Sprinkle with remaining sugar. Bake the cake in the preheated oven (middle rack) for about 45 minutes (test with a skewer). Slice the finished cake warm or cold into pieces. Whip the cream stiff, sweeten to taste, and serve each piece garnished with a dollop of whipped cream.
