Chocolate Yogurt Cups

Ingredients
- 100 g dark chocolate
- 1 small strong espresso
- 2 Eggs
- 20 g vanilla sugar
- 100 g chilled whipping cream
- 2 tbsp liquid honey
- 400 g yogurt
- 150 ml passionfruit juice (from about 3 fruits, with about 3 tbsp seeds)
- 1 tsp Cornstarch
- cocoa powder
- 1 Egg white
- fine sugar
- aromatic pink organic rose petals
Instructions

Whisk the egg white lightly and brush both sides of the rose petals with it, dust with fine sugar and let dry on parchment paper for about 3 hours.

Heat the passionfruit juice and thicken it by stirring in a little water‑dissolved cornstarch; allow to cool slightly.

Stir yogurt with honey until smooth.

For the dark mousse chop chocolate coarsely and melt together with espresso over a double boiler. Remove from heat.

Separate eggs: beat yolks with vanilla sugar until fluffy, then add melted chocolate and whisk in with a wooden spoon. Fold in stiffly whipped cream with a whisk.

Layer yogurt, passionfruit juice, and chocolate mousse in dessert glasses, dust with cocoa powder and garnish with candied rose petals.
