Ingredients
- 600 g zucchini
- 2 onions
- 4 tbsp olive oil
- 2 tbsp pine nuts
- 2 tbsp raisins
- 1 tsp fennel seeds
- Salt
- Pepper (freshly ground)
- Lemon juice
- 2 tbsp chopped parsley

Wash, trim and halve zucchini lengthwise; slice into 1 cm thick rounds. Peel, chop onions and sauté in hot oil until translucent.

Add zucchini, cook briefly, then stir in pine nuts and raisins. Sprinkle fennel seeds and season with salt, pepper and lemon juice. Cover and simmer over low heat for 5 minutes. Plate with parsley before serving.
