Ingredients

  • 3 medium zucchini
  • 700 ml chicken stock
  • 2 Garlic cloves
  • 1 onion
  • 2 tbsp olive oil
  • 1 tbsp Crème fraîche
  • 1 handful basil
  • Salt
  • black pepper (freshly ground)

Instructions

    Wash the zucchini and cut into small pieces. Peel and finely chop the garlic. Peel and finely chop the onion. Heat the oil in a pot and sauté the onion and garlic until translucent.

    Add the zucchini and continue to sauté while stirring. Pour in the chicken stock, cover, and simmer over low heat for 10-15 minutes. Add the basil leaves and blend the soup until smooth. Stir in the crème fraîche and season with salt and pepper. Serve garnished with small zucchini cubes.
