Zucchini Soup

Ingredients

  • 500 g zucchini
  • 150 g butter
  • 0.75 l vegetable broth (from a jar)
  • 4 Tbsp crème double
  • salt, pepper

Instructions

    Wash the zucchini, trim the ends and slice into rounds. Heat 2 tablespoons of butter in a pot, set aside one-third of the zucchini slices, sauté the rest, pour in the vegetable broth, cover and simmer over low heat for 15 minutes.

    Blend with an immersion blender, folding in the butter pieces and the reserved zucchini slices. Season with salt and pepper, serve on plates, and add a dollop of crème double to each bowl.
