Ingredients

  • 1 Zucchini
  • 100 g Feta
  • 1 tbsp mixed chopped herbs
  • zest of 1 lemon
  • 4 tbsp wild garlic oil
  • Salt
  • Pepper
  • 4 Tbsp lime juice
  • 1 tsp sugar
  • 1 Spring onion
  • lemon balm leaf (for garnish)

Instructions

    Whisk together lime juice, wild garlic oil, salt, pepper, and sugar to make a dressing. Wash and trim the spring onion, then slice into rings. Rinse the zucchini, pat dry, and cut lengthwise into very thin slices or shave with a mandoline.

    Arrange the zucchini slices on plates, sprinkle with spring onion rings, lemon zest, and herbs. Crumble feta over the zucchini. Drizzle with the dressing. Serve garnished with lemon balm.
