Winter Field Salad for the Thermomix®

A winter field salad for the Thermomix® by Spoonsparrow is always wonderfully tasty!

Ingredients

  • 500 g field salad
  • 60 g dried cherries (4 tbsp)
  • 4 tbsp white wine vinegar
  • Salt
  • Pepper
  • 2 tbsp honey
  • 2 tbsp Rapeseed oil
  • 4 tbsp Walnut oil
  • 80 g walnut kernels
  • 120 g aged goat cheese (e.g., Crottin de Chavignol)

Instructions

    Clean the salad, removing root sprouts without separating the leaves.

  2. 2.

    Wash and spin dry the salad.

  3. 3.

    Add walnuts to the mixing bowl, chop on level 4 for 3 seconds, then lightly toast at 2 minutes Varoma, level 1, clockwise without measuring cup. Transfer to a bowl and wipe the mixing bowl clean.

    Crush cherries in the mixing bowl on level 5 for 3 seconds; set aside.

    Combine vinegar with salt, pepper, and honey in the mixing bowl, stir on level 4 for 3 minutes. Slowly add oils while emulsifying, then add cherries.

    Grate cheese on a vegetable grater or using a mandoline into thin slices. Toss salad with cherry‑honey sauce. Plate and sprinkle with nuts and cheese.
