- 600 g fennel
- 2 peaches
- 2 tbsp honey
- 2 tbsp white balsamic vinegar
- 2 tbsp lemon juice
- 0.5 tsp Curry Powder
- 3 tbsp grape seed oil
- Salt
- Pepper
- 2 tbsp chives rings

Wash the fennel, halve it, trim off the tough core if necessary, and slice or shave into thin strips.

Wash the peaches, halve them, pit, and cut into wedges.

Whisk honey with balsamic vinegar, lemon juice, curry powder, and grape seed oil. Season with salt and pepper.

Combine the sliced fennel, peach wedges, and dressing; let rest for about 15 minutes to meld flavors.

Before serving, taste again and sprinkle chopped chives on top.
