Ingredients
- 4 zucchini
- 200 g carrots
- 200 g pumpkin
- 100 g peeled nuts (e.g., hazelnuts, walnuts, cashews)
- 4 tbsp olive oil
- 2 tbsp white balsamic vinegar
- Salt
- black pepper (freshly ground)
- parsley (for garnish)

Wash and trim the zucchini, then slice into thin sticks or grate. Peel, wash, and slice the carrots and pumpkin into thin sticks as well. Toast the nuts in a dry pan until golden yellow, remove and set aside.

For the vinaigrette mix the oil with the vinegar and season with salt and pepper. Combine the vegetable sticks with the vinaigrette and nuts, arrange on plates, and garnish with parsley leaves before serving.
