Ingredients

  • 4 hard boiled eggs
  • 200 g spinach (fresh)
  • 150 g Mushrooms
  • 80 g walnut kernels
  • 1 tbsp chopped parsley
  • 1 tbsp butter
  • 4 tbsp balsamic vinegar
  • Salt
  • Pepper

Instructions

    Wash the spinach, rinse, and spin dry. Peel the eggs, quarter them, and season with salt and pepper.

    Clean the mushrooms with a kitchen towel, optionally peel, slice, sauté in butter, deglaze with balsamic vinegar, and stir in parsley.

    Lightly toast the walnut kernels in a dry pan without oil.

    Arrange the salad on plates and top with mushrooms, walnut kernels, and eggs. Serve with fresh white bread.
