Homemade Potato Salad

- 1 kg firm potatoes
- 1 onion
- 150 ml meat broth
- 4 tbsp white wine vinegar
- Salt
- Pepper (freshly ground)
- 0.5 bunch Chives
- 5 tbsp seed oil
- 50 ml meat broth
- 4 tbsp white wine vinegar

- 100 g mayonnaise
- 0.5 box watercress

Wash the potatoes and simmer in salted water for about 30 minutes covered.

During this time peel and finely dice the onion. Bring together with the broth and vinegar to a boil, then pour over the potatoes. Season with salt and pepper, mix loosely, and let it stand at lukewarm temperature.

For the mayonnaise variant allow the potatoes to cool and slice them. Whisk the broth with vinegar, salt, pepper, and mayonnaise, then fold into the potatoes. Let sit briefly and adjust seasoning.
