Ingredients

  • 800 g starchy boiling potatoes
  • Salt
  • 100 g zucchini
  • 130 g flour
  • 130 g semolina
  • 1 Tbsp starch
  • 2 egg yolks
  • freshly ground pepper
  • flour for dusting
  • 30 g Butter
  • 80 g freshly grated Parmesan
  • Basil

Instructions

    Peel the potatoes, quarter them and simmer in salted boiling water for 20–25 minutes until tender. Drain and let steam off for a few minutes. Meanwhile, cube the zucchini and cook in lightly salted boiling water for 10 minutes.

    Mix the potatoes and zucchini together and press through a potato ricer. While still warm, add flour, semolina, starch, and egg yolks to the purée and knead until combined. Season with salt and pepper.

    Dust a work surface with plenty of flour, roll out the gnocchi dough into ropes 2–3 cm in diameter, then cut into ~1 cm pieces. Lightly press each piece with a fork and blanch in salted boiling water until they rise to the surface.

    Remove with a slotted spoon and shock in cold water. Heat butter in a pan and toss the drained gnocchi until lightly browned. Season with salt and pepper. Serve in deep bowls, sprinkle with Parmesan and garnish with basil.
