Balkan-Style Pork and Rice

Ingredients

  • 500 g pork tenderloin
  • 3 onions
  • 2 Garlic cloves
  • 4 tbsp olive oil
  • 0.75 l vegetable broth (homemade or instant)
  • 2 tbsp Tomato paste
  • 1 tbsp sweet paprika powder
  • 2 tsp grated thyme
  • Salt
  • pepper (ground)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 chili pepper
  • 3 tomatoes
  • 200 g Long grain rice
  • 0.5 bunch fresh parsley

    Dice the pork, peel and chop onions and garlic into small pieces. Sear the pork in hot oil until browned. Reduce heat, add onions and garlic and cook further. Deglaze with vegetable broth, then add tomato paste, paprika powder, and thyme. Season with salt and pepper and simmer for about 30 minutes.

    Meanwhile wash, deseed, and dice the bell peppers and chili. Briefly blanch tomatoes in boiling water, peel, quarter, and remove seeds. Add peppers, chili, tomatoes, and rinsed, well-drained rice to the pork mixture, stirring carefully, and continue steaming together for another 30 minutes until the rice has absorbed the liquid and is fluffy. Season again with salt and pepper, sprinkle with washed, dried, finely chopped parsley, and serve hot.
