Ingredients

  • 1 kg small potatoes
  • 1 kg pork loin (prepped for cooking)
  • Salt
  • Pepper
  • 4 Tbsp sunflower oil
  • 800 g new potatoes
  • 150 g bacon cubes
  • 2 fresh bay leaves
  • 2 tbsp liquid butter
  • 1 Tbsp freshly chopped thyme

Instructions

    Preheat the oven to 200°C with fan and top heat. Rinse the pork loin, pat dry, and tie with kitchen twine. Season with salt and pepper. Heat 2 tbsp sunflower oil in a large pan and brown the meat all over. Remove from the pan.

    Wash the potatoes thoroughly and cut them in half or quarters depending on size. Mix with the remaining oil, bacon, bay leaves, salt, and pepper, then spread on a baking tray. Place the pork on top and brush with liquid butter. Sprinkle thyme over everything and bake for about 40 minutes. Turn the potatoes and meat halfway through. Use a meat thermometer; remove when it reads 70-80°C.
