The Zucchini Pesto from Spoonsparrow comes completely without animal products, but it is definitely not just for vegans. See for yourself!
Ingredients
- 1 zucchini (ca. 250 g)
- 50 g cashews
- 3 tbsp olive oil
- 5 Tbsp nutritional yeast
- 2 Handfuls Basil
- 1 handful parsley
- Salt
- Pepper
Instructions

Clean and wash the zucchini, then roughly cut into pieces. Add the cashews, olive oil, nutritional yeast, herbs, a pinch of salt and pepper to a stand mixer.

Blend the ingredients into a fine pesto and season with additional salt and pepper if needed. Transfer the zucchini pesto to a jar and store in the refrigerator.
