Ingredients
- 4 bulbs fennel
- 4 tbsp olive oil
- 1 sprig rosemary
- 1 sprig thyme
- Salt
- Pepper

Clean and quarter the fennel. Lightly coat a roasting pan with 1 tbsp olive oil and place the fennel inside.

Wash the herbs, shake off excess water, and scatter them over the fennel. Season everything with salt and pepper, drizzle with the remaining olive oil, and roast in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for 25–30 minutes. Remove the fennel from the oven and serve immediately.
