Ingredients

  • 3 zucchini
  • 100 g starchy cooking potatoes
  • 1 onion
  • Salt
  • 1 egg
  • 2 tbsp freshly grated Parmesan
  • 1 Tbsp starch
  • nutmeg
  • 3 tbsp olive oil

Instructions

    Wash the zucchini and potatoes, peel the zucchini, peel the potato, and grate all on a coarse grater. Peel the onion, dice finely, and mix in. Add a pinch of salt and let rest for 10 minutes.

    Preheat the oven to grill mode. Mix goat cheese with Provençal herbs, coriander, pepper, and salt; taste. Wash the tomato, remove stem, slice into wedges. Toast bread in the oven for 5-10 minutes until crisp.

    Squeeze excess moisture from the grated vegetables, mix with egg and Parmesan, add a little starch if needed to keep the mixture firm. Season with salt and nutmeg. Fry patties in hot oil for about 4 minutes per side until golden brown.
