Goat Cheese Roll-Ups

Ingredients

  • 6 black olives (pitted)
  • 6 sun‑dried tomatoes (in oil)
  • 0.5 tsp Oregano
  • 100 g goat fresh cheese
  • Salt
  • pepper (ground)
  • 2 Garlic cloves
  • 8 thin lamb cutlets (≈80 g each)
  • 2 tbsp oil
  • 1 lemon (cut into wedges)

Instructions

    Drain the tomatoes, finely chop the olives and mix with oregano into the fresh cheese; season with pepper.

    Halve the garlic cloves crosswise.

    Flatten the cutlets, season with salt and pepper, spread the cheese mixture on them, roll up and secure with toothpicks. Heat oil in a large pan and brown the rolls over medium heat for about 4 min all sides, remove and keep warm. Sauté the garlic halves skin‑side down for about 2 min. Add 100 ml water, cover and simmer on low for about 8 min; return the rolls and let them finish cooking.

    For serving place half a garlic clove and two rolls (remove toothpicks) on a preheated plate and garnish with lemon wedges.
