Ingredients

  • 1.3 kg whole chicken (1 whole chicken)
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp olive oil
  • 150 ml dry white wine
  • 2 cloves garlic
  • 1 tbsp Lemon Juice
  • 1 Carrot
  • 1 stalk leek
  • 150 g celery root
  • 1 onion
  • 1 lemon
  • Lemon balm

Instructions

    Divide the chicken into 8 pieces, rub with salt and pepper, and sear in hot olive oil. Peel and chop the garlic, add it at the end, sauté briefly, then pour in the white wine.

    Cover and simmer over medium heat for about 40 minutes. Ten minutes before the end of cooking, add the cleaned and roughly chopped vegetables and onion.

    If needed, add a little water (the liquid should not boil). Serve garnished with lemon slices and sprinkled with chopped lemon balm.
