Ingredients

  • 4 zucchini
  • 300 g band noodles
  • 3 tbsp olive oil
  • 300 g Turkey breast fillet
  • Salt
  • Pepper (freshly ground)
  • 50 ml white wine
  • 150 g crème fraîche
  • 2 tbsp lemon juice
  • 1 tsp broth
  • a pinch cayenne pepper
  • 1 tbsp thyme leaves

Instructions

    Wash and trim the zucchini, then slice lengthwise into thin strips using a vegetable peeler or mandoline.

    Cook the noodles in plenty of boiling salted water with 1 tbsp oil according to package instructions until al dente. Add the zucchini strips during the last 2 minutes of cooking.

    Drain the noodles and zucchini in a colander.

    Meanwhile, cut the turkey into bite‑sized strips, season with salt and pepper, and sear in the remaining oil for about 3 minutes on all sides.

    Remove the turkey and set aside covered.

    Deglaze the pan with white wine, stir in the seasoned broth, and reduce until almost evaporated. Then whisk in crème fraîche and lemon juice, season with salt, pepper, cayenne pepper, and fold in thyme leaves.

    Combine noodles, turkey, and sauce; serve on plates.
