Ingredients
- 600 g large zucchini (2 large zucchinis)
- 1 mild red pepper
- 2 sprigs thyme
- 2 tbsp pumpkin seed oil
- 1 lemon (juice)
- 1 tsp Dried oregano
- Salt
- black pepper (freshly ground)
- 2 tbsp olive oil
- 250 g smoked trout fillet

Wash the zucchini and trim the ends. Using a spiralizer, cut into fine linguine strips. Wash the pepper, halve it, remove seeds, and dice finely. Remove thyme leaves from stems and mix with pumpkin seed oil, lemon juice, oregano, salt, and pepper.

Heat olive oil in a hot pan. Add the zucchini and cook over low heat for 2–3 minutes. Then add the oil-lemon mixture, stir through, and season to taste.

Break the fish fillets into small pieces. Arrange the zucchini strips with the fish on a plate and sprinkle with diced pepper. Serve with lemon wedges as desired.
