Ingredients

  • 700 g waxy potatoes
  • Salt
  • Pepper
  • nutmeg
  • 4 tsp spelt whole‑grain flour
  • 1 egg
  • 2 tbsp Rapeseed oil

Instructions

    Wash the potatoes and boil them unpeeled in a pot of water. Cook for about 10–15 minutes over medium heat until just tender, then drain and let cool.

    Peel and grate the potatoes. Season with salt, pepper, and freshly grated nutmeg. Mix in flour and egg. Heat oil in a pan. Shape the potato mixture into flat cakes and fry each side for about 5 minutes on low to medium heat until crisp. Serve the boiled‑potato rösti with fresh apple sauce or herb quark.
