Zucchini Pasta with Lime

Ingredients
- 3 zucchini
- 1 Organic Lime
- 20 g Pumpkin Seeds
- 350 g whole wheat spaghetti
- 1 tbsp Olive Oil
- Salt
- Pepper
- 50 g parmesan (chunks)

Clean and wash the zucchini, then slice into strips with a vegetable peeler. Wash the lime under hot water, dry it with paper towels, peel it, finely chop the zest and squeeze out the juice.

Cook the spaghetti according to package instructions in plenty of boiling salted water until al dente, drain in a colander and set aside.

While the pasta cooks, heat olive oil in a large pan and sauté the zucchini for 1–2 minutes. Add the lime zest and juice, cook for 2–3 more minutes over medium heat. Season with salt and pepper. Grate the parmesan.

Plate the spaghetti and zucchini together, sprinkle with pumpkin seeds and grated parmesan, and serve immediately.
