Zucchini-Pasta Mash with Ground Meat

A gentle zucchini puree combined with whole-grain pasta and seasoned ground meat delivers a balanced meal rich in B vitamins and plant-based protein.

Ingredients

  • 300 g zucchini (2 zucchinis)
  • 4 tbsp rapeseed oil
  • 80 g mixed ground meat
  • 100 g whole‑grain pasta
  • 1 sage leaf

Instructions

    Wash, peel, trim the zucchini and grate it coarsely on a box grater.

    Heat 1 tablespoon of oil in a pot over low heat. Add the ground meat and sauté without browning. Add the grated zucchini, cover, and cook over low heat for about 15 minutes.

    Meanwhile, bring 750 ml water to a boil in another pot. Add the pasta and sage leaf and cook according to package instructions.

    Drain the pasta in a colander, reserving the cooking liquid in a bowl.

    If the meat‑zucchini mixture dries out too early, stir in some reserved pasta water.

    Combine the cooked pasta with the zucchini and meat. Blend with an immersion blender, adding remaining oil and enough pasta water to form a smooth mash. Let one portion cool slightly before feeding; chill the rest completely and freeze in portions.
