Zucchini Omelette Burger
The zucchini omelette burger is packed with valuable protein for growth and plenty of biotin for a functioning metabolism.
Ingredients
- 70 g small zucchini (0.5 small zucchini)
- 1 stalk flat-leaf parsley
- 25 g smoked turkey breast (1 slice)
- 1 large egg
- 1 tbsp milk (1.5% fat)
- Salt
- Pepper
- 1 tbsp Rapeseed Oil
- 45 g whole-grain roll (1 whole-grain roll)
- 1 tbsp herb quark
- 1 lettuce leaf
- 50 g small tomatoes (1 small tomato)
Instructions

Wash, trim and roughly grate half a zucchini. Wash parsley, shake dry, pluck the leaves and finely chop.

Slice turkey breast into thin strips.

Whisk egg, milk, a pinch of salt and pepper in a small bowl with a fork.

Fold in zucchini grates, parsley and turkey strips.

Heat rapeseed oil in a small pan and pour in the egg mixture. Cook over low heat for 2-3 minutes until set on one side.

Flip the omelette and cook the other side until firm. Meanwhile halve the whole-grain roll and spread herb quark on each half.

Wash, shake dry the lettuce leaf and place it on the lower roll half.

Top with the omelette and fold the excess edges over or simply fold the omelette in half.

Slice tomatoes after washing and removing stems. Arrange them on top of the omelette, place the upper roll half on top, and serve immediately. If preferred, lay tomato slices on the lettuce first and then add the omelette.
