Ingredients

  • 500 g small zucchini
  • 500 g mushrooms
  • 3 tbsp chives
  • 3 tbsp oil
  • Salt
  • Pepper (freshly ground)
  • 100 ml Vegetable broth
  • 150 g yogurt
  • 1 tsp Cornstarch
  • 0.5 tsp grated untreated lemon zest

Instructions

    Wash, trim and slice the zucchini into finger‑thick rounds. Clean the mushrooms and cut them into large pieces.

    Heat oil in a large pan. Brown the zucchini and mushrooms over high heat while stirring constantly until they are firm yet tender. Season with salt and pepper, remove from the pan and keep warm.

    Add the broth to the pan and bring the fond to a boil while stirring. Whisk the yogurt with the cornstarch, pour the mixture into the broth, and simmer while stirring. Transfer everything to a baking dish and bake at 250 °C for 5 minutes to gratinate.

    Stir in the chives and lemon zest, season again with salt and pepper, spoon over the zucchini and mushrooms, mix gently, and serve immediately.
