Sweet-Sour Pumpkin from the Oven

Ingredients

  • 1.4 kg muskmelon pumpkin
  • 1 handful Thai basil (or basil)
  • peanut oil (for the baking dish)
  • 6 tbsp rice vinegar
  • 60 g brown sugar
  • 2 tbsp Soy sauce

    Preheat the oven to 160°C fan.

    Wash, clean (remove skin, seeds and fibers), cut the pumpkin into about 1.5 cm thick wedges, then into pieces. Wash the basil, shake dry and pluck leaves from stems. Spread pumpkin pieces in a large oiled baking dish. Heat vinegar, sugar, soy sauce and 50 ml water and dissolve the sugar. Brush pumpkin pieces with the sugar mixture, scatter basil leaves on top and bake for about 30 minutes until the pumpkin can be easily pierced. Turn occasionally.
