Ingredients
- 4 eggplants
- Salt
- 2 Garlic cloves
- 2 tbsp olive oil
- 0.5 untreated lemon (zest and juice)
- 1 tbsp freshly chopped mint
- Pepper
- 150 g Feta
Instructions

Wash, peel, and dice the eggplants. Mix with 1 tsp salt and let sit in water for about 10 minutes. Then rinse in a sieve and drain on kitchen paper. Peel and finely chop the garlic. Sauté briefly in hot oil. Add the eggplant cubes and fry for 5-10 minutes while stirring until golden brown. Add lemon zest, juice, and mint; season with salt and pepper.
