Zucchini-Mint Gratin
Try the delicious zucchini-mint gratin from Spoonsparrow!
Ingredients
- 2 tbsp olive oil
- 800 g zucchini (3 zucchinis)
- 3 tomatoes
- 425 g pizza tomatoes (1 can)
- 1 vegetable onion
- 2 Garlic cloves
- Salt
- Pepper
- 3 sprigs Mint
- 50 g parmesan cheese
Instructions

Brush a baking dish with 1 tbsp oil. Wash, trim and slice the zucchini into about ½ cm thick rounds. Dice fresh tomatoes and mix them with the canned tomatoes.

Peel and finely dice the onion and garlic. Heat the remaining oil in a pan over medium heat. Sauté the onion and garlic until translucent. Add the tomato mixture and season with salt and pepper.

Wash the mint, shake off excess water, pluck leaves from 2 sprigs, finely chop and stir into the sauce.

Layer zucchini slices alternately with sauce in the baking dish. Grate parmesan over the top and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 20 minutes.

Meanwhile, cut remaining mint into fine strips and sprinkle over the gratin before serving.
