Green Asparagus Pesto

Quick and easy green asparagus pesto from Spoonsparrow, perfect for spring cooking.

Ingredients

  • 500 g Green Asparagus
  • 20 g basil (1 bunch)
  • 1 Garlic clove
  • 30 g pine nuts (2 tbsp)
  • 50 g Parmesan cheese (1 piece)
  • 150 ml extra virgin olive oil
  • salt to taste
  • pepper to taste

Instructions

    Wash the green asparagus and trim the woody ends. Blanch in a pot of boiling water for about 5 minutes, then remove and shock with cold water.

    Meanwhile, wash basil, shake dry and roughly chop. Peel and chop garlic. Cut asparagus into pieces. Toast pine nuts in a dry pan until fragrant, then set aside. Grate parmesan.

    Combine asparagus, basil, garlic, pine nuts, parmesan, and olive oil in a blender and puree into pesto.
