Zucchini Ham Strudel

- 1 Zucchini
- 150 g cooked ham
- 4 Spring Onions
- 2 EL Butter
- 2 EL freshly chopped parsley
- Salt
- pepper (from the mill)
- 350 g strudel dough
- 120 g cream cheese
- 60 g grated cheese (e.g. Emmental)

Preheat the oven to 180°C fan.

Wash, trim and dice the zucchini; dice the ham as well. Wash, trim and slice the spring onions into rings. Sauté everything briefly in 1 EL butter in a hot pan. Remove from heat, let cool, mix in parsley and season with salt and pepper.

Roll out the dough and cut into four rectangles (about 20x20 cm). Spread cream cheese on each, leaving a border. Distribute the filling over the cream cheese. Fold the side edges slightly over the filling and roll up. If needed, brush the edge with water and press firmly. Place on a baking tray lined with parchment paper. Melt the remaining butter and brush the strudels. Sprinkle with grated cheese and bake in the oven for about 25 minutes until golden brown. Remove from the oven and serve warm or cooled.
