Fish in Strudel Dough

Ingredients
- 1 stalk Celery
- 100 g zucchini
- 1 Shallot
- 0.5 handful parsley
- Salt
- Pepper (freshly ground)
- 1 tbsp Lemon Juice
- 350 g strudel dough
- 5 tbsp liquid butter
- 600 g white fish fillet (e.g., halibut)

Preheat the oven to 200°C with top and bottom heat and line a baking tray with parchment paper.

Wash and trim the celery and zucchini. Cut both into about ½ cm cubes. Peel and finely chop the shallot. Rinse the parsley, shake dry and set aside a few leaves for garnish; finely chop the rest. Mix the chopped parsley with the vegetables, season with salt and pepper, and combine with lemon juice.

Spread the strudel dough and cut it into eight squares of about 15 cm each. Brush each square with a little butter and place a small amount of the vegetable mixture in the center of each square. Rinse the fish fillet, pat dry, and cut into eight equal pieces. Place each piece on top of the vegetables and fold the dough into parcels. Arrange the folded side down on the baking tray and brush with remaining butter.

Bake in the oven for about 20 minutes.
