Zucchini Goat Cheese Tart

- 250 g flour
- 1 pinch salt
- 125 g cold butter
- 1 egg
- 3 green zucchinis
- 3 yellow zucchinis
- 200 g goat cream cheese
- 200 ml heavy cream (at least 30% fat)
- 4 eggs
- pepper (ground)
- nutmeg
- flour (for the work surface)
- butter (for the pan)
- fresh herbs (for garnish)

Mix flour with salt and sift onto a work surface. Create a well in the center, scatter butter pieces around it, and crack an egg into the well. With a knife, crumble all ingredients and quickly knead by hand into a smooth dough. Shape into a ball, wrap in cling film, and refrigerate for 30 minutes.

Preheat the oven to 200°C (400°F) with upper and lower heat. Meanwhile wash, trim, and slice the zucchinis thinly. Whisk the goat cheese with cream and eggs, seasoning with salt, pepper, and nutmeg.

Roll out the dough on a floured surface slightly larger than the tart pan, line the buttered pan, and lift up a rim. The dough edge may extend over the pan. Layer zucchini slices in a circular pattern like roof tiles, then pour the egg-goat cheese mixture over them. Bake in the preheated oven for 30-35 minutes until golden brown. Remove and serve garnished with fresh herbs.
