A fast sheet‑pan apple cake topped with quark is made with puff pastry covered in apples and peanuts, ready to eat in no time!

Ingredients

  • 2 Eggs
  • 100 g sugar
  • 250 g quark
  • 0.5 tsp untreated lemon zest
  • 20 g liquid butter
  • 1 pinch salt
  • 500 g tart apples
  • 50 g unsalted peanuts
  • 1 roll puff pastry (chilled)
  • 1 tsp cinnamon

    Preheat the oven to 180°C fan‑forced and line a baking sheet with parchment paper.

    Separate the eggs. Beat the yolks with sugar, quark, untreated lemon zest, and liquid butter. Whisk the whites with a pinch of salt until stiff peaks form, then fold into the quark mixture.

    Wash, peel, core the apples with an apple corer, and slice them thinly. Roughly chop the peanuts. Lay the puff pastry on a parchment‑lined baking sheet and spread the quark batter over it. Arrange the apple slices on top and sprinkle with chopped peanuts. Dust with cinnamon and bake in the preheated oven for 15–25 minutes until golden brown.
