Zucchini Flower with Ground Meat Rice Filling

Ingredients

  • 200 g rice
  • Salt
  • 16 zucchini flowers
  • 200 g ground meat
  • 1 Zucchini
  • 1 Shallot
  • 1 Garlic clove
  • olive oil
  • 2 tbsp freshly chopped parsley
  • pepper (ground)

Instructions

    Wash the rice and cook it almost tender in salted water. Drain and let cool.

    Preheat the oven to 180°C fan.

    Gently wash the flowers and pat dry. Carefully open the cups and remove the stamens with tweezers. Place the ground meat in a bowl. Wash, peel, and finely chop the zucchini. Peel and dice the shallot and garlic. Sauté them in 1 tbsp oil until translucent, then mix with the rice and parsley into the meat. Season with salt and pepper. Spoon the filling into the flowers and twist the ends slightly.

    Arrange the filled flowers side by side in a greased baking dish and drizzle with olive oil. Bake in the preheated oven for 20-25 minutes until golden brown.
